It was a strange but beautiful combination of familiar yet new. I think it’s because he used ingredients not normally combined with each other – I would say fusion but that brings an image of 90s cuisine of mixing mango or pineapple with western food or something. It was a lot more complex yet it made a lot of sense. It’s difficult to describe the flavours in that 3-course meal… Fresh and inventive”
